wayne, you might have to start out as a junior designer in print, but a lot of these problems can be worked out when you get them. it is ALWAYS a good idea to have a good relationship (sexual if possible) with your printer. they can tell you everything that they need and explain to you what is "good for them".
bonseff has the right idea about non-profit and charity. sure, you may do some free work, but they will pay for it to be printed, so you can design and avoid the cost of printing. believe me, if you start getting a printer to just run 20 copies of something you made for you folio, they will charge the shit out of you. it will add up quickly.
i had a few mockups in my folio under a plastic sheet so that you couldnt tell it was only 1 page. so that is one way around it.
and remember, you can get away with a certain amount of bullshitting... just dont over do it.
