stripping the parts off older bikes means a lighter/stronger bike for cheap and, more importantly, fewer components to fail. this is critical for those who depend on the bike, especially for people who ride all year. (derailleurs and whatnot are a nuisance over time and when it gets really cold or muddy)

moreover, the idea was (at least originally) to make the bike less appealing and more difficult to steal.

many people want or need to build their own bike from parts, and it is cheaper and easier to go fixed or single speed.

there are a lot of reasons really... not the least of which is that it will most certainly will make you a better, more aware rider.

that being said, its not for everyone. its also very trendy right now.
