    you're right in your description of flat.

    the higher your aperture, the greater the DoF. the more more light you have present the quicker your shutter speed will be. however if you are in a tripod environment with a stationary object, exposure lengths are trivial

    i would say you are going to be hard pressed to find a lens that will satisfy both your need for small to medium product photography as well as fashion photography

    using a general use lens will likely result in the vignetting and curvature you seem to want to avoid
