Peruano Cuisine is *phenominal*. To that end, the NYTimes had a contest 2 yeas ago that ranked all countries globally by cusine based on a number of factors (diversity, complexity, product availability over a years time, flavors, etc). All countries were ranked by large scale by 100 chefs in the U.S. (clearly majority were from other countries originally)....
Peru took 3rd.
Behind France and China. :)
