apply a day rate, without expenses (film, processing, drum scan).
You'll spend all of that day setting up, testing light, and what-not. Even if for 1 photo = charge a day.
Especially when doing digital, cuz then you have a client standing next to you, playing art director and creative director based on what he sees on the small display of your digi cam. And you will be doing shot after shot after shot, without end...
