    hope you realize that illustrator, indesign and photoshop can all give different CMYK conversions for the same pantone color . . .

    and yes, certain pantone colors looks COMPLETELY different depending on whether the ink mix is printed on coated or uncoated stock. All software conversion are approximations and some are worse than others.

    only way to really test is to make up a bunch of color swatches with diffferent cmyk variations close to what you suspect might be a starting point, and decide from that output. (If close enough is good enough, however, go with the software conversions.)
