I have heard that the primary reason they don't allow electronics and especially headphones is the following:
They want the cabin to be as responsive as possible in case of a takeoff or landing emergency.
They want everyone aware to what might happen. It's also why you have seatbacks up, tray tables up, etc. They make the cabin as consisent as they can in case of emergency. No headphones means the dude who might be rockin' to Whitesnake instead gets to live another day (hopefully) if the plane skids to a fireball stop at the end of a takeoff, simply because he was aware of his surroundings.
