what's the final piece going to be? identity materials? like business cards and stationery? if so, pull out a Pantone book, or go look at one at a printer's shop, and pick your colors. this could be a 2 color job – a PMS dark gray and a PMS blue.
if it's for anything else, and especially if there are no existing corporate Pantone colors to worry about, I'd say go with digital, and you don't have to worry about any of the overprinting etc.
best bet is to find a printer and show them a PDF of the job. they'll offer up some suggestions/options.
