just be original honestly...If you see that somebody else did a great project, like Stardust's Hugo Boss project, be careful not to do a faux Hugo Boss motion piece in the same style. I would pick a client that is in desperate need of some better advertising (i wont name names) and apply your skills to boost their image. in regards to one of the other posts about picking the same work that your company did, you may step on toes. Suppose they wanted something better but the client refused, and you come across as some hot shot kid thinking he/she can do better...? I would rather explain your approach on your "fake" project, and your reasoning for decisions, and explain how that fits into the position that they are looking to fill. Hope that helps,
