I think it's totally cool to make new campaigns/ads and put them in your portfolio. Just make sure you tell your possible employer that this is "your take" on a campaign. Don't pretend Apple hired you to do something new.
When I started out I looked through magazines and cut out ads I thought were crappy. Then I did them much better and presented both. Potential employers loved it.
Just make sure your ads are better than the originals otherwise you'll look like a tool.
