If you use .Mac synchronization and IMAP email you dont have to copy email across.. it synchs across all your Macs... Same with iCal, Safari bookmarks, keychain passwords, etc.
but if you dont have that, you can grab the Library Mail folder and stuff...
Most apps are copyable, but its usually better to reinstall and just copy settings as needed...
