Or could you possibly just not download and delete files off whatever e-mail server you are on?

OH yeah... that's a good point. I set my desktop to download the files from the mail server, and I set my laptop NOT to delete the files, so that when I'm on the road, I can get and read email, but when I get home, it downloads and deletes from the server, but is stored on my desktop for long term.

Thanks flavorful for the reminder of this... it's pretty important to your set-up between two computers.

Unfortunately, my mail ISP won't allow a lot of mail storage on their servers, so I have to get it off there fairly often.

Sync'ing Contacts, Calendar, Notes, etc... takes a different approach and you have to use software or Import/Export.
