It was very good.
The texture is like beef, and it tastes a little like venision. It looks like mutton though.We had the chops Saturday, although I couldn't chop 'em because my cleaver (and my aim) wasn't quite good enough. So I took the bone out, and pan fried it.
I had mine rare, with just a little salt and pepper. It was swimming blood like a fucking blue steak chossy. You would've loved it.
