Memphis is my hometown and I enjoy going back 1-2 times a year... :-)
I'd stick with Memphis & Nashville for this trip - (Tennessee is a long state, so it would be hard to cover both the West & East sides.)
In MEMPHO: Get dry-rub barbeque at The Rendevous (http://www.hogsfly.com), famous Fudge Pie at the North End Restaurant, and do the free Trolley Tour of the South Main Arts District (on the last Friday of each month). Some highlights there are The Jay Etkin Gallery (http://www.jayetkingallery.com)

I'd Google around a little for more info on these 2 cities. There are a lot of things to do, but most of 'em are hidden...
