If your only output is to burn on DVD, don't worry about compression just yet. The iDVD, or whatever, will handle that when encoding. Set everything to highest settings. For example: Under Compression, select "Animation," or None if available. No keyframes. Sound uncompressed.
If you need a version in which file size is an issue, choose Sorenson 3 , and select High Quality. A ketframe 15 frames or so is fine. I assume you are on NTSC, not PAL.
I've done loads of work that way that ended on 42" plasma screens, and it looked nice and crisp.
