Learning Flash is usually two things: learning animation and learning action script, the programming language. If you aren't going to do very sophisticated programming, then the book that comes with the program will be enough to get a great start. Flash also has a fantastic online help system and a reference for every action script command. For more advanced programming, I would recommend a good book. I hear the O'Reilly book is excellent.
Err's advice is good, but don't bother trying to draw that well in Flash. It's a piece of crap for illustration. Since you probably know Illustrator well, stick with that. It'll be your constant companion.
