i did that for years too, until consolidating everything for a powerbook. for a G5, its probably not going to be a problem to partition, but on an 80GB drive, i ran out of OS/App room at 20GB pretty damn quick. Make sure you leave plenty of room.
Also Adobe apps create some kind of huge temp file on the startup drive when working with large print files. Even if you specify a diff scratch disk target, it still ate up the last 1 or 2GB of free space i had left.
Long story short, i couldn't work like that anymore.... went ahead and offloaded everything to two external HD's and then re-installed and dropped everything back into place on one volume.
Quick and dirty but not reccommended, though everything is working great. Thank gawd for OS X!
