They did use green boards, they show how it's done in the extras.
I was going to correct josimarX about the two camera pass thing, but think about it: There's no other way that they could get what's beneath and behind the green board unless they had the same video without someone skating in it.
Actually, all of the parts with the invisible boards, the camera is on flat ground, and not held by someone in motion.
The only other way it could be done is repeated clone stamping in PS of each frame.
