bill them bi-weekly or at different phases of the project. Its no difference if they are a client or a design house. I've seen them both just decide not to pay. They get a deposit from the client, so you should get payed for time worked.
Advice: Don't mess up and hit all deadlines!! My experience is freelance people tend to be more lax (guilty mySelf in the past), and then wonder why they don't get more work...
