Dig that fearless ampersand!
Oh I think your Tartine mark is the best by far, especially for a logo which will be reproduced at all sorts of sizes. I might print these all at tiny, business card sizes and show the client what happens to fine lines. Maybe you've already done that and they are still insistent. In that case, try the following (tho they all might be a little too formal):
