Most useful app for me at the moment is Doris.
Yes it is just another todo app but it has an online version too which is really helpful if (for example) my gf needs me to get shopping or summit she can log on and fill out a list. Also RDM+ looks interesting aswell Remote desktop app. but not yet prepared to fork out £12 for it

That's not an APP but rather a bookmark - I have it - it's great: live TV from all the major channels over WiFi or 3G. It's so good in fact that I'm supprised they've not been stopped / seems to good to be true.

Sure - obviously these are the ones pre installed.

BeeJiveIM: a great IM client that allows you to use gTalk, AIM, MSN, Yahoo, Facebook Chat, etc. Sort of expensive but a pretty well made application.
Yelp: Listings and reviews for everywhere in the USA. Not sure if it's international.
Newsstand: Wonderful RSS reader, syncs with your Google Reader account.
Tweetie 2: One of my favorites applications available for the iPhone due to it's sleek UI and overall execution. Basic twitter application with twitvid and twitpic abilities among others.
Ego: Great for tracking your twitter follows, google analytics, and vimeo numbers.
!FOUND!: Simple ffffound feed
Tipulator: Gorgeously designed tip calculator.
Convert: Unit converter, great design.
Groceries: Keep your grocery list(s) organized
Rocket Taxi: Great for finding/planning a cab ride. USA only I think.
Hitchcock: For the creators of film. Kind of expensive, very well made.
MiniBooks: Integration with Freshbooks.
Outpost: Best basecamp app around.
CNN: Streaming video, headlines, etc.
Flixter: Movie times, locations, etc.
Pandora: Wonderful music for free.
DoGood: Collaborate on doing something good in a large way each day.
Nice List: Christmas lists!
A few other great apps that are a little more self explanatory: Facebook, Myspace, Evernote, Skype, Remote, iDisk, Flickr (by yahoo), The Weather Channel, myWireless (at&t), Godaddy, LRG, Shazam, TV Guide, Analytics, Dropbox and foursquare.
