Put a cube of cheese in the middle of the patty you've created so when it'd grilled it'll melt and you'll have the best cheeseburger ever

Little onion, garlic, pinch of bread crumb, an egg per every two pounds of beef.

- I could substitute teriyaki for soy, right? (I never cook East Asian food, so don't have any soy handy)detritus
- yeah, you can.. teriyaki is a more developed sauce made from soy.. same thing, just more flavorsjonatne

spicy schezuan pretzel burger.
crush up pretzels to a large crumb and add to burger.
add some spicy schezuan sauce.
garlic is good.
worchestshire sauce.
cracked pepper.

Ground sirloin (better, leaner meat, less fat striations)
one half egg per burger, beaten, like jonatne's recipe
bread crumbs (just enough to help everything stay together)
3 rough-chopped garlic cloves
Worcestershire
a little Heinz 57
Coat both sides with cracked black pepper and Rendezvous steak seasoning (or any other good steak seasoning).

You know, garlic is one of my favourite things - have it every day, quite often eat it raw, but I've never considered it apt for burger territory.
I see a whole new vista of possibility opening up before me...

May I just make a couple of ingredient recommendations to my British brethren?
Garlic from these guys (especially in summer/Autumn, when they have British-grown ready)

ground beef
garlic
onion
salt and pepper to taste
basil
oregano
little olive oil
1 egg
breadcrumbs
parmesan cheesethe key is to really mix and mash the meat (yes i've siad something slightly sexual. quick everyone note it) just really knead it with your hands until its smooth and almost a patee (sp?) consistency.
put it in a pan and let the sides sort of crisp and brown.
do not over cookserve on a bun with tomato sauce and parmesan cheese... it should be crispy on the outside and creamy on the inside

Wow, I'm impressed. A thread about beefburgers contains the word "striations".

Mine, for the archive.
Minced (aka Ground) Beef (more fatty than lean)
1/4 non-MSG vegetable bouillon cube*
Enough egg to make the beef 'damp'
Black Pepper
A smidgen of mustard
Very finely chopped onion (practically minced)
A glob of Worcestershire sauceThe MOST important thing when cooking burgers - in fact, beef generally - is to start cooking from room temperature.
* nothing against msg, just that these ones tend to be more purely stocky, rather than merely flavour enhancing

Also, I start grilling at around 600 degrees fahrenheit (dunno the celsius) to ensure a good sear...then take it down to around 500. Repeat for side two. Only flip the burger once.

I've always wanted to try rolling hamburger into a sausage shape. Like a beef log...and then eat it with a hot dog bun.
- Don't. It ends up cooking like meatloaf, which is to say, it's not great.detritus
- Sorry - do what you like. It's just a heartfelt piece of advice from someone who once made a burger to fit in a baguette.detritus
- i think there are rules against that?jonatne
- lol detritus, in that first post you sounded so sad I could picture you with the burger remnant, sobbing and cursing jehovah.ian
