I need to reduce the ink coverage on a job from ink coverage is 320% to aroud 280%. What options do I have, is it basically just down to using a lighter colour?

what software are you using to create the image?

Change the font to a ... white face.

unrichen blacks? (Just like Poppa Trump wanted!)

You don't need to lighten a color, you need to create a colour profile with a 280 ink limit so that when your final file is exported it uses that profile to create the cmyk file

best is to ask your printer for an ICC profile of there press -- install that and use it to export the pdf or photoshop image

isn`t that something the printer should take care of when starting the printing process? ether when making the plates with the right profile or handling it directly on the machine?
you can also embed a aedequate profile (uncoated instead of coated) but in my experience the printers prefer the coated version (even when printing on uncoated paper) because the can still desaturate by themselves...
my advice: talk to the printer.
