GMAIL breaking up signature?

I started manually pasting my email signature into emails because I want it right at the bottom of my latest reply (not at the very bottom of the email if there's a bunch of back and forth).

Sometimes it sends fine but sometimes Gmail breaks up the email and puts this symbol:

before the signature. It doesn't do this every time and I can't figure out why.

I don't want to switch to plain text because it adds all the >'s to the previous messages.

And I click "remove formatting" too. How do I make sure it doesn't break up my email in the future?

In GMAIL go to your settings and click this little button under your signature you created.

Insert this signature before quoted text in replies and remove the "--" line that precedes it.

This will do what you are asking for.
