Grains are raster effects, use a vector noise layer or convert the final stuff to duotone. the reason why you see m+y is because it's an rgb effect.

That effect is a raster effect as far as I know...the grain texture isn't vector, so if you want full control of the grain and the colours within it, use Photoshop for this. You can always bring your photoshop grain texture back into illustrator and mask it into the shape you want.
