by hand... get the original vector file and work it backward to a respectable representation of the original
you could be lazy about it and just dump it in photoshop and drop a hue/saturation adjustment layer on top and remove all color saturation... but you may end up getting 'mud' depending on how the original is colored

It's a Vector file. It should be easy to switch manually.
Unless you got a PowerPoint or Word logo.

if there are a lot of colors, it's an art in and of itself. sometimes it means creating new forms for the logo—having a vector of the logo is definitely the easiest way to do it.

if it's not vector already - use google to search your client's website for a pdf of an annual report or something that has a vector version of their logo, use: site:theirwebsite.com filetype:pdf in your search field, download it, open the page with the logo in illustrator delete everything else, make it white or make a box around it and knock it out if it's already white (make sure you keep the color one too)
