Besides practice or working in a good studio, how have you improved your design skills?
I am looking to increase my editorial layout skills and basic website structuring skills.
Any ideas of projects to give myself or books / videos to see?

The best way to learn, or atleast from my own experience, is to look. Look at as many editorial layouts as you can. Look at what is good about it, or what you like about it, and also look at what is bad about it. This will enable you to work out best practices, be able to decipher what works and what doesn't.
Then you do it. Apply the principles you've learnt from looking and try it out yourself. But the important bit, is to always keep looking. See how others create great layouts.

In my personal experience, the best way I've improved my design prowess was to take on projects that forced me to learn new things, or innovate (the look, delivery, content) for a certain technology, platform, or medium.

I like to point out that practice and working on a good studio will not improve your skills.
All kidding aside, the only way to improve your skills is to have a master show you the trait. Even working on a 1 project can help substantially. I'm not talking about someone managing or directing you, but someone working "with" you, let you look over their shoulders and explain some of the through process behind their decisions and technique and then pass the mouse over to you, and give you some feedback on your mistakes. Like I said, if you find a way to do that for 1 or 2 projects, you will be on another level. Please note: a MASTER, a VIP, superstar virtuoso, king of design can help you on this, not some knucklehead.
