When did this term for hats become so popular? I feel like I've never heard this until maybe the last 3 months, and then i see it everywhere.

They've always been known as snap-backs. Its on account of the adjustable snap fastening, located at the back.

yeah, the term is from the 80s when snapbacks were popular, then fitteds came around and stole the thunder, and now for some reason snapbacks came back again, this time the term is beng used more just to distinguish the hats that are fitted.
People are more aware of this term now, because of internet most likely, that's all

They were never known was snap-backs, they were known as hats. Then they were known as trucker hats, when the default hat of that style had a solid backing and couldn't be adjusted.

To normal public maybe, but to embroidery / clothing companies 'trucker hat' is the one with mesh back (for hot days) with foam filled interior on the 2 front panels of the hat.a trucker hat falls in the category of adjustable 'snap back' but snap-back doesn't necessarily mean a 'trucker hat'. Just like adjustable, doesn't mean snapback either.
