How do you stroke a text in illustrator CS5,
even if selected in the toolbar, I can't see it

You're using Flash not Illustrator.
That would be your problem.

aaghahahaha sorry was supposed to say flash,
I'm working in both and somehow didn't think while writing
flash it is then

I don't think you can, apart from maybe adding a drop shadow and turning the strength right up and the distance to 0.
No idea if that will kill performance though.

found a somehow working solution,
if the text is already outlined,
just F8,
create new movie clip,
use filter,
glow or outer glow and use this settings
