Should you show before and after shots of redesigns? Or just show the better redesign?

That depends on the amount of pieces you want to show. Try focusing on the "better" designs, but that's just what I would do.

If it's a brand that people might be familiar with I would just show the redesign. If it's not, it's always interesting to see a before and after... opens up good conversation/discussion. I would keep the 'before' a lot smaller though so the focus is on your redesign

You could offer the before as an additional. Display the new work, with a link somewhere offering to show it side-by-side with the original, or showing the process of rebranding.

I think there is a time and place for them. I always want to see someones best work, and their presentation/sell of it. Seeing the final product is a refreshing look on the practicality of the vision as well as seeing the hurdles that were conquered in completing the project. Someone that has all pitch work in their folio, only has pitch experience. Working with clients is 90% of the job.
Though, I wouldn't have this be the focal point of your portfolio, but instead a fraction of it. I'd refer to it as an "real world" type presentation, which could work very well during an interview. Not without you present. It's always a good idea to give the agency/team credit too, cause a project will involve multiple individuals with incredible talent.
The process of getting there is critical though, so well worth showing.
- Hard though, I wouldn't associate or tarnish your first impression to a client/agency with "before" work. Claim your own.nthkl

I would create one or two Case Studies. That way you can properly explain the process, make sense of the Before and After, and hopefully demonstrate why your redesign is awesome.
But these Case Studies are a separate thing from your portfolio.
