My theory on why we are drawn to patterns is that it represents a repitition over time conveying a sense of truth. Each element represents a moment in time that is consistent like the sunrise and sunset. Another reason why people are more keen to a piece when it's in a series.

patterns are the first thing a person looks for when viewing something, and i think it's because it's the fastest way to understand something. if you figure out a pattern early on you don't even need to look at the rest of it because you already know what it'll be
