So, I just got a new Mac Book Pro, and, working on a project today, I got the spinning wheel of death over and over again, using Illustrator CS4.
Otherwise MBP has been fantastic.
What should I do?

You should try the solutions on this document, as if everything else is fine, it is clearly an illustrator issue.

A few things I did not see at a glance on that list:
1) Even though your mac is a new one, do a Software Update
2) Are you working off a server? Is your file saved over a network? If so try working on a local file.
3) How's your fonts? Is the project occurring only in this specific project, or are you able to work on other files normally? Could be a font issue. Deactivate all the fonts related to that specific project and try to work in some test files, see what happens.Let us know how you do.

Yeah, I realized afterword that the problem happened when I was working off a server. The problem seemed to go away when I worked locally.

I had that same problem and it ended up being fonts. So I uninstalled every non-system font and it worked fine again. Whenever I need a font I just create a new set in FontExplorer...
