because of the ipad/phone (etc...) introduction...
is consideration of the layout in a portrait format now 'equally' as important as a standard landscape one?

The best way to make a decision is to look at the site stats for a given site, and see how many users are accessing using iOS, as well as defining your objectives; which is to say, if the you want to make your site appealling to as broad an audience as possible (versus targeting a certain segment), the you should consider the best solution for all platforms.
Keep in mind that the iPad is _just one_ of many platforms out there, and it's certainly not the de facto standard.

Most sites display pretty well on the iPad/ Phone/ Ped already.
I don't think portrait vs landscape enters into it.

I really hope ipads/iphones adapt to internet standards rather than internet standards having to adapt to ipads/iphones.

Most webpages are typically designed 'in portrait' - it's just that some or most of it disappears beneath the fold.
