When I export a pdf from InDesign and send it to people - they tell me the fonts are all wack out when they view it because the don't have the font I used.
What gives? I thought PDF export "flattens" everything so ANYONE with a reader can view it the way it was designed.
Am I doing it wrong?

make sure you're embedding the fonts. have a look through the export options for the pdf. it should be in there somewhere.

it also depends if the font is protected or not.

imma say, check to see if the version of font you're using is only a screen display font. It will drop characters.
