Snorkel trip out to Molokini Island
Rent a Jeep and take the road to Hana
Bike ride down from Haleakala crater
Hike down to the 'Blow Hole' on the North shore
Tan on the beach and gawk at chicks
Golf, drink, and smoke a cigar
Go Para-sailing

"Rent a Jeep and take the road to Hana"
this is a really fun trip but you have to dedicate a full day and have some mad patience. everyone and their mother goes on this trip. don't get me wrong, it's well worth it but it's like THE thing everyone does in maui.
if you can go golf. literally no one golfs out there and they have all these nice courses. i golfed daily on the cheap and was sometimes the only guy on the course. it was bliss.
kaanapali was super cool. most of the resorts in maui are secluded or semi-secluded. it's not as city-like as waikiki is. so kaanapali is a nice little town you can shop at, walk around and catch lunch at a few really nice places (for cheap). they have a GREAT cigar shop downtown there too. definitely check that out.

Driving up Haleakala for the sunrise is worth it

Road to Hana does take all day, Kona is right. But it's like a trip to Tijuana. If you've never been there, you really should go, but once you've gone there, you'll probably never go back. The scenery is amazing.
Places that offer 'Dinner Plate Specials' have really inexpensive meals as compared to most other restaurants, but a burger at the Hard Rock Cafe in Lahaina while checking out the waitresses is worth it.

I went on a really cool hike with a friend from the area called the, "Commando Hike."
Hike up a stream, then scale up two small waterfalls, then into and through a lava tube that finally comes out to an opening with a huge waterfall coming down into a pool of water on one side, view of the ocean on the other. Takes about 3 hours-ish.

I'm not a fish person but I tried the cajun opakapaka burger, and it was absolutely amazing.
