You can choose it from the menu (urg), or go to Keyboard and assign that menu function to a new hotkey, say F19. (You have to type in the menu text).
Have to wonder why they would think switching that button back to zooming the window would be a good idea..

On previous versions of iTunes when you clicked on the green button it use to minimize the player to a nice little size, so it could sit comfortable out of the way of all the other program windows, why has Apple stopped this?!
