Does mobile me push any email traffic from any email address to sync with all devices?
I'm looking at hosted email options and Exchange Server for Snow Leopard looks interesting – any thoughts? The costs are roughly the same annually.

Are you talking about hosted Exchange Server? I've used both... only used Exchange because my company used it, otherwise wouldn't bother. MobileMe works best for integration with iPhone, I chose it mainly because of all the synching between my Macs to iPhone to web (great if all I have access to is an internet cafe), and online backup.
If you have to use Exchange you can still set it up alongside your MobileMe account (or any other IMAP mail accounts).

MobileMe does push... Mail, calendar events, contacts, etc synch between devices in seconds (mostly).

"From any email address"... Are you talking about your non-MobileMe addresses from other mail providers? They will simply be handled as IMAP accounts, so your iPhone or your Mac will synch directly with the IMAP mail server, and all will show the same content.
