Anyone know how to save each layer into an individual PDF and/or all layers into ONE PDF?

I shall say this only once.
Select layer elements.
Copy it. CMD+C
Switch to Preview App (Mac)
Paste inside (CMD+C)
Then save as PDF.Over and out.

cool, but it doesnt preserve the artboard unless i add a big white bg layer ...

That is truth, but didn't know you need one.
Try to see at Joshua Davis web. He is master at action scripting in Illustrator.

Can't you just create an action for "save as PDF"?
I just did in CS3 and it works for me.You just have to hold option and click on the visibility icon for the layer you want (to hide all the others) and move/rename your saved file so it doesn't overwrite. May be a bit much of a pain, but it's worth a shot.

yea that works... i guess what i really wanted was a layer comp option like in photoshop.... so i didnt have to keep doing what you said above... oh well
