Is there a way to eyedrop the color of one object onto a separate object without having it change to match that object's border too? SubQ: Is there a way to eyedrop the color of on textblock onto a separate textblock without having it change to match that objects font too?

yes there is! (not rly)
make a rectangle, color pick the color from the text block, have the rectangle go that color, then for the next text block color pick from the rectangle!

and option-shift will reverse it, it'll put the color of the selected object on the object you click on.
also, important to note that shift-click will pick up whatever is active in the tool palette, meaning if stroke color is in the foreground, it'll grab just the stroke.

OMG
If you alt-click the dropper, it sets the destination object with the currently-selected style!

Today is a good day. I can't believe it took me so long to learn this. I must be getting old. :(
