I have a feeling that at least part of the problem is Acrobat's inferior rendering. It's great in so many ways, but Preview often creates cleaner renderings with type and vector art.

i've just accepted that fonts sometimes look shit in acrobat.
vertical characters ("I") are the worst.

Purely a visual thing, it'll print fine. Trust me, I is on da internets man.

thanks for replying!
Jimbo82 cheers for the link but unfortunately I can't use that solution as his was for a single logo whereas mine is for a 45 page document... it needs to be kept as editable text.
both my above screenshots are how the 2 docs are seen in Acrobat, so it's something to do with the way Acrobat is handling the new pdf...

there's an option in prefs, at least in acrobat pro, not sure about reader- "use local fonts" will use the font on the local system rather than embedded outlines if it is available. there are also font smoothing setting there which may differ between machines

Hey acescence, would be interesting to explore in case it throws up any more solutions, not a solution in itself though as it would involve me sending out a disclaimer with the document asking everyone who reads it to reset their preferences to view the document -- kind of messy :(
