Which one should I go with? I'm technically Greek Orthodox and I don't understand a lot of what's going on. I'm laid back, don't believe that Christ was God. And I have an all around faith in humanity. Which one is good for me?

Since this is the very definition of a Christ-ian, I don't think you are going to have much luck.
Maybe try another religion outside the realm of Christianity like Mormonism or Scientology. Or perhaps just become an atheist.
