Before your interview, throughly research the studio/firm/agency and be familiar with their work, products, brands, etc...

Might be a little obvious but good proposals (if the job is big enough) or at least professional looking quotes with some info on process, timelines etc... help portray professionalism to non designers for whom good work may not be enough. At least it seems to help.

I would show them some good work, show that you can give them great service, but then follow up with "I'm way too busy right now and probably not within your budget, but I know someone else who will do it for you cheaper." From then on, it wouldn't be unusual for them to start begging you for help on their project....
