How do you document your process + your work to keep an updated portfolio?
When photographing print projects what is your process/ how is the best way to take shots that make your work look best?

I don't do that, but I would check this:
- good light, good resolution
- integrity of the work and process
- must be interesting to see and the different steps must be understandable (in the process)
- shots of the work in real world are very nice too (like to see if they really function in the wild)if you decide to hold the works in front of the cam and show your hands holding it...it's up to you...it's kind of trendy, but I got bored with all this I hold up my poster portfolios...

do you recommend using a scanner? I'm having trouble getting the 'right' background.. and getting rid of any distortion.

there is no fixed process
do what you want to do.
do something different to stand out from the crowd.i'd be looking at each piece individually and seeing what the best way to present it would be.
i.e something might look better being hung then a photo taken of it in situe rather than just a scan or a jpeg made from the original artwork files.Doing them all the same is a bit boring too.
Chop n change.

Depends ofcourse...some things i use the pdf to create the
portfolio...
