What kind of apps? Adobe, or just your everyday common apps? (and Mac/PC?)

adobe .. illustrator and photoshop would work for now.

Copying the application files over won't work. You need the install files.

Copy over the app folders, and these...
Macintosh HD/Library/Application Support/Adobe
Macintosh HD/Library/Preferences/(anything from adobe apps)
~username/Library/Application Support/Adobe
~username/Library/Preferences/(a... from adobe apps)I'm not positive it will work, but it used to in the days of CS1...

In case that doesn't work, you can also try using the Migration Assistant (Applications/Utilities/Migratio... Assistant).
Also, you can download the software from Adobe's site and enter a valid serial number (you should be able to find this in either the About this app menu or on the splash screen when launching any of the apps). This seems like possibly the easiest method, and everyone seems to recommend it, but the last time I tried it the downloadable version did not have an option to enter a serial number (it was stiff about staying a trial).
