So it's been some time since I worked in AE and have a few questions I hope you guys can help me with.
The project is pretty simple. It's just images that are going to pan and be zoomed into, along with some music. Since there is not actual video footage what would you recommend I set my document settings to? Should I increase my frame rate to make it run smooth? It is going to be played as a stand alone quicktime file so file size is not an issue.
Also, when I "Make Movie" what settings would you recommend I use?

there are pre-made templates for compositions (just like in photoshop) that has most standard sizes and rates included, so you don't have to do it by hand.
Just make sure you know, what is going to be the final output before you start, and that is always easier to scale down a movie clip, but scaling up will destroy resolution

also try this frame rate 29.97 .. its worked well for me
final output ... Quicktime with the Sorenson codec- I like the h264 codecMasterramos

Use whatever composition settings you want, if file size isn't an issue, why not do it HD? then, like Meeklo said, when you watch it full screen, it won't look like shit.
When you 'make movie', render lossless ( animation codec set to best quality ), then compress to H.264 out of quicktime pro, I have found the results to be much better than rendering H.264 straight out of AE
