sending estimates

Im thinking about using something like FreshBooks to streamline my estimates and invoices.
Currently just creating estimates in pdf and sending across with T&C's (adapted from AIGA). Client then faxes back signed estimate and back page of T&C's. It's a bit of a pain in the ass way of doing things.
What does everyone else do when I comes to estimates? Is e-mail response enough to cover you in the event a project turns nasty? I don't think FreshBooks or others include a signature field.

I use quickbooks. I know a lot of people on here are not down with it, but it really streamlines my office / invoice flow plus more.

How would you get around the faxed part? You need a signature and they have to sign on a hard copy.
Email is good, but I prefer to have a signed copy. Occasionally clients will send the contract back with the deposit.
I use Word. I always give options in the proposals, so QB would be too cumbersome.
