Jakob Nielsen seems the be the leading man for HCI
.......... although speaking as someone who works prodominently with flash, this guy talks alot of shit.

Check out Outside In Design written by Carl Kessler (never mind the fact that he's the exec in charge of my department at work) for theory from a software development point of view. Also check out boxesandarrows.com for good content and links.
