I know the basics of how to record but how intensive is it to record 30 mins of audio at a time? Would you need a huge amount of RAM?

Nah, I used to do that on my 66mhz PC back in the day.
It might make a difference if you've got a stupidly high bit rate - but 30 minutes is half a CD, which is less than 300mb.
