How would one make a time lapse video? We want to do a thing where we set up a camera to take a picture every hour or so for about 3 weeks. I've got some ideas but can think of limitations for each. Anyone done something like this that would have some insight? Thanks.

depending on which camera you own there may be software available that will do it for you.
canon slr's come packaged with software that allows you to set how you want a frame taken - as long as you are tethered to a computer.
what camera are you using?

Nikon's Camera Control 2 does that. You can set the time lapse to whatever you want.

Like Sikma says, Canon Remote Capture does the trick if you have that brand, though you'll need to get a special battery adapter (if you don't have one already) that plugs straight in to the mains.. otherwise you'll only get a few hour's worth of footage :)
- Also, look into webcam options - esp. ones billed as good for home security. better with a proper camera though, detritus
