There's lots of third party apps for synching, Missing Synch, Pocket Mac etc. Or you might be synching the phone direct to an email service rather than synching to the Mac...
I'm synching some stuff with Windows (on Parallels) on my Mac (bookmarks), some stuff synchs with the Mac (photo downloads etc), and the phone synchs email and calendar direct with Exchange Server over the mobile network..its complicated...
I'd say choose the phone you want first, then go hunting for the synch solutions..

I've got Nokia N95 btw..

and..... most phones will synch with the Mac through iSync, but you really only want to do your address book that way. You dont really want to synch mail with the Mac, you are better to have the phone logging into your mail server directly... ideally using an IMAP account rather than POP, so that whatever changes you make on any device are synched to the server and then each device shows the same state (including deleting on one device deletes from others, show sent mail on all, not just the one you sent from, if mail is read or not, if flagged or not etc)

I"m using the blackberry pearl, and it works fine with pocketmac, only problem you got to make sure you only use one to update. Lets say you update with your phone then put it on your comp then update on comp , when you put it back on your phone you will have double entries,

I have a Samsung Palm phone. It's a few years old and Missing Sync stopped supporting it. I think smart phones are worth it and I think it's worth it to KNOW you're shit will be synced and won't overwrite vital information like Missing Sync did to my phone recently. I won't even try to sync anymore.
I'm buying the iPhone.

depends.. I have it through T-Mobile in UK with unlimited internet access plan, so phone is practically 'free' but its all built in to the contract price, so who knows what I'm paying for it really.. I don't.

i got a nokia n73. i can sync it with my mac no problem. i can even set up a playlist on itune and have it transfered to my nokia. also contact list is easy to maintain.
n95 would be awesome but a bit too expensive for now.
